My Little Pony Cake

I am absolutely thrilled with how this cake turned out.. especially as it is my second fondant-covered cake.

It was my neice’s 4th birthday and she is obsessed with horses, so I decided to make a My Little Pony Cake and used the design by JennyWenny from Flickr

The top tier is a white chocolate mud cake, torted with Italian Meringue Buttercream . This was the first time I’ve ever made it and it is so delicious that I am now converted and it will be my ‘go-to’ icing for everything now! I added some strawberry essence to it, however next time I think I’ll blend up some fresh raspberries or strawberries to give it a more realistic flavour.

The second tier is the same recipe as above, except I substituted some of the water with lemon juice and added poppy seeds and rind. I made some fresh lemon curd and mixed it in with the IMBC and it was a perfect finish to the cake!

Everyone raved about the taste of the cake (phew… it’s always scary when people start eating it!), and I think that lemon seems to be one of the best options for a birthday cake.

Here is a picture of the other side of the cake. I bought a sugar shaper and used it to make the rainbow (and also the pony hair)

      I always use regular bought fondant, bakels brand
