One of the best things to take away from my 4 years living in London was the famous Banoffee Pie – a scrumptious dessert made with pastry, toffee, bananas and whipped cream. Although not the most economical of desserts with the current banana prices, it is so easy to make and a real crowd pleaser.
I started a day early by making the toffee for the pie. Simple boil a tin of sweetened condensed milk for approx 4 hours
It is a good idea to boil a few tins at the same time and then you can keep a couple in your pantry for next time (these will keep for at least a year). Make sure you keep an eye on the water level so that the water doesn’t dry out and tins explode (now that would be fun to clean up
)
To make the pastry cases, I made the same pastry that I’ve made previously for my lemon meringue pies
Next, open the toffee and spoon into the cooled pastry cases
Slice your banana thinly and layer on top of the toffee
Whip up some cream and spoon on top. I don’t bother adding any sugar/vanilla to the cream as I feel the toffee adds enough sweetness.
Add some grated chocolate on top and enjoy

Thanks for sharing; these look fairly simply to make. I may attempt them I’m not running around with the grandkids this weekend! They’ve been asking me for coffee cake and my husband usually orders New York style crumb cake right online. I may told him to hold off and give these banoffee pies a whirl
