I found this fantastic recipe for making fortune cookies and thought it would be a great idea to make with the girls. They love their baking and are really into arts and crafts, so in combining the two I hit the jackpot 🙂
We cut out some strips of paper and started to write out our messages

A special one for Sam in the middle (subtle as a sledgehammer 🙂 )
Once finished, we organised our ingredients
2 egg whites
1/4 teaspoon vanilla extract
1/2 cup flour
1/2 cup white sugar
4 tablespoons of water (although on thinking this through, I may have only put in 2)
Preheat oven to 200 degrees celcius. Mix egg whites and vanilla until foamy
Measure out and sift your flour and sugar and add to the mixture.
Add your water until the mixture looks like this
Put some baking paper on your tray and lightly grease. Add a teaspoon of mixture and spoon into a circle about 8cm in diameter.
Place in the oven and put the timer on for 5-6 minutes. You will have to experiment a bit with the timing, but after a few goes, you’ll work out which is right for you. An undercooked cookie wont harden once cold.
While the cookie is baking, prepare your work area with a mug, spatula and an egg carton
(this mug was Sam’s first father’s day present)
Keep an eye on the oven and remove when your cookie is brown on the outside (about 1/2-1 cm)
Place your message inside and fold in half
Place over the side of your mug to get that fold, and gently hold for a minute
Let it cool into shape in the egg carton
And then enjoy!
