Raspberry Cheesecakes

I bought a mini cheesecake pan before christmas and had a few disasters trying to make the perfect baked cheesecake for christmas! So when I discovered a no-bake cheesecake recipe, i thought I would give it a go and mix it with my special raspberry mixture to make a layered cheesecake.

To start with, crush a packet (250g) of marie biscuits (or any other plain biscuit) and 100g of melted butter.

Press your mixture into the bottom of your cheesecake tins and then place in the fridge for an hour.

To make your cheesecake mixture, whip up 100ml of thick cream and in a separate bowl mix up 250g cream cheese until smooth. Mix both together along with 2/3 cup of castor sugar, 1/2 teaspoon of salt and a teaspoon of vanilla extract (or a vanilla bean). Spoon into your cheesecake tray and place in the fridge until firm.

Make your raspberry mixture and allow to cool slightly before spooning into your cheesecake tin and placing in the fridge for a few hours. I added a gelatine leaf to the mixture so that it would set (you could also use powdered gelatine).

Top with some whipped cream and a raspberry and give them away before you consume the lot!
