Lemon Curd Cupcakes

I was very lucky to receive a huge bag of lemons (thanks Kym!), and in the spirit of Masterchef, I thought I would recreate Julie’s Lemon Diva Cupcakes and add a twist of my own!

Start by preheating your oven to 180C and gather the following ingredients:

100g unsalted butter

3/4 cup castor sugar

1/2 tsp vanilla extract

2 eggs

1 1/4 cups of self raising flour

1/2 cup milk; and

zest of 3 lemons.

(Makes about 8 )

Cream the butter, sugar and vanilla extract until light and fluffy. Add eggs one at a time, beating well between additions. Fold through flour and milk in two batches until combined.

Gently stir in the zest and then divide the mixture between the cupcake cases and bake until the top springs back (approx 18-20mins)

While the cupcakes were cooking, I made up a batch of lemon curd.

Once the cupcakes had cooked and cooled, I cut a ‘pocket’ in the cupcake

I then filled the pocket with the lemon curd

I was originally planning on making some Italian Meringue Buttercream and mixing it with the lemon curd for the icing, but couldn’t be bothered running to the shops to buy more butter.

It didn’t matter in the end because I came up with the easiest and yummiest lemon frosting by whipping some cream until stiff peaks and then stirring in the remaining lemon curd.

The girls were happy I finished using the lemon curd because they got to lick the container 🙂

To decorate the cupcakes I used free toppers that I downloaded from The TomKat Studio and I also made some cookies that were designed to look like lemon slices (but I’m not too happy with how they turned out…. I think I need to work on my drawing skills!!!)

    WOW! Your lemon curd cupcake looks so yummy, I’ve used the same recipe but cooked into orange curd instead.
