I hope you’re not sick of all the lemon recipes….I still have plenty of lemons to go 🙂
This recipe is super easy and fantastic to make as morning tea.
You will need:
125g softened butter
1 cup of castor sugar and another 1/2 cup later for the syrup
the zest of 1 large lemon, grated finely and then juiced
1.5 cups of self-raising flour; and
1/2 cup of milk
Start by creaming the butter, sugar and lemon zest
If I am taking this loaf out with me, I brush on the mixture and then wrap the loaf in foil. If it is for you to gobble up that day… simply leave the loaf in the tin and cover it with a tea towel to keep it warm.
