Lemon Krummeltorte

What the?! I hear you say….

Exactly my thoughts when it was suggested to me on my facebook page. However after googling it, and tasting it, I think I will be making plenty of variations on this in the future 🙂

Start by assembling your ingredients (this makes about 7 mini tarts)

1 cup of self raising flour

1/2 cup of sugar

50g chopped butter

1 egg

1 vanilla pod

lemon curd (I used about 1 cup, but I suggest making a whole batch and keeping it in the fridge to use for other recipes)

icing sugar to dust

(this recipe has been adapted from one by Destitute Gourmet)

Process the flour, sugar and butter until it resembles fine breadcrumbs (note my stunning little blue purchase in the background….which I may or may not have bought solely for the purpose of grinding my almond meal for macarons….)

Add the egg and pulse to combine

Press 2/3 of the mixture into your tart tins

Spoon in the lemon curd

And crumble the remaining mixture on top

Bake in a preheated (180C) oven for 35-40 minutes, dust with icing sugar and serve with some cream.

    OH DEAR LORD. They look amazing. I love the new purchase – even though I don’t know what the hell it is. You make me want to bake Bronnie – but I dont know. You should start up a cooking school for kiddies xxxx
