Whoopie Pies

I know what you’re thinking…. what the heck is a whoopie pie?!! My thoughts exactly, but they are all the rage in the baking world at the moment (and did you see them on Masterchef during the New York challenge?)

Not quite a cake, not quite a cookie, these delightfully squidgy treats are knocking the cupcake off it’s pedestal 🙂

While on holiday I picked up a copy of the Whoopie Pie book by Hannah Miles (who coincidentally, was on the UK Masterchef) and set about creating the vanilla version once I was back.

You will need:

125g unsalted butter

200g castor sugar

1 large egg

1 teaspoon of vanilla extract

320g of self raising flour

1 teaspoon of baking powder

1/2 teaspoon of salt

125ml buttermilk

125ml sour cream

100ml hot water (not boiling)

For the filling I used a basic cream cheese icing (2:1 ratio of  cream cheese: icing sugar)

Start by creaming together the butter and sugar until light and fluffy.

I had a lot of little ones desperate to help with this recipe!

Add the egg and vanilla and mix well until combined.

Sift the flour and baking powder into the mixture and then add the buttermilk and sour cream.

Whisk until combined and then using an icecream scooper or a dessert spoon, spoon onto a prepared baking tray.

You can apparently buy special baking tins for whoopie pies (they look like flatter muffin tins), but I followed the recipe exactly and baked for 10-12 minutes in a preheated oven and got this…

I think I had scooped too much mixture, so for the second batch, I used my mini tart tins (and I stamped out my whoopie pies from this tray using a circle cutter)

I think next time I will just put the mixture into a baking tray and stamp out the circles.

Next, make up your filling (I simply whipped up my cream cheese, icing sugar and added a few drops of pink food colouring). Pipe onto your whoopie pie halves.

To finish.. dust with icing sugar and serve before the gremlins steal them overnight 🙂

    Glad to hear even though you were on holidays you were still thinking about what you could bake when you came back to reality!!

    Btw love the photo of the girls on their “Step Cups” to reach the bench…LOL
