Lemon Push Pops

These pushpops were a huge hit at the party last week

The pushpop containers were purchased off ebay, and basically a pushpop is a cross between a trifle and one of those callipo-style icy poles. You can use any combination of layers (ie cheesecake/mousse/cake/cream/curd), but for these ones, I decided on vanilla cake, cream and lemon curd.

I baked my vanilla cake in two rectangular lamington tins so that I ended up with a thin layer of cake. Once cool, I stamped out circles of cake the same size as my pushpop containers.

I then whipped up my cream and filled two piping bags with the lemon curd and whipped cream.

I filled up a soup turren with some baking beans so that I could stand up my pushpop containers. I guess you could use any deep bowl/bucket and also some coffee beans/dry lentils etc as an alternative.

Next I layered the curd, cream and cake.

To refrigerate, I put 4 pushpops in a small glass and held them together using a hair tie :-) (I’m sure there are better ways of doing this!!)

    These look great. I don’t know anything about cooking but maybe you could stick them in a block of styrofoam or oasis in the fridge?

      I did try that initially, but i didn’t have the height in my fridge. I would have had to lower the shelf , which i could have done if it wasn’t for my full fridge!!!
