Apple & Berry Slice

When I began this blog about 6 months ago, the aim was to showcase baking tutorials that you could do with your children. In the last few months I’ve diverged and it’s been all about me, me & ME 🙂

So.. I thought I’d get back to basics and show an easy (and healthy) recipe that your kids can help you with. It’s perfect for school/kinder snacks and can easily be adapted to include whichever fruits are in season for you.

This recipe has been adapted from the Healthy Food Guide

2 cups of rolled oats (I used porridge oats)

1.5 cups of wholemeal flour

3/4 cup brown sugar

1 teaspoon cinnamon

2 teaspoons baking powder

1/3 cup canola or sunflower oil (I only had vegetable oil, so used that)

1/2 cup plain low-fat yoghurt (I only had a vaalia probiotic drink, so used that)

1 egg

1 large apple, peeled and grated

2 cups frozen raspberries

some icing sugar to dust (optional)

Start with a big smile on your face, and then preheat the oven to 180 and add the rolled oats to your mixing bowl


Add the wholemeal flour and other spices

Add the oil, yoghurt and lightly whisked egg

Stir the mixture together, making sure you sneak in a little taste..

Press 2/3 of the mixture into a lined baking tin (I used a 20cm rectangular tin)

Don’t forget to lick the spoon! (or steal a lick of the spoon…)

Sprinkle on the grated apple and raspberries

Add the remaining mixture on top and bake for 30-40 minutes until golden

Dust with icing sugar and enjoy!

    just made them, can’t wait for them to come out of the oven. such an easy slice to make with the little ones….
