Passionfruit Cloud

This is a really quick and simple recipe that was given to my mother by our neighbour about 25 years ago. It is usually made with strawberries (and called Pink Cloud), but because passionfruit is in season (and more ‘christmassy’) I decided to use them instead.

You will need:

2 cups of cream
2 egg whites
2 tablespoons of lemon juice
1 cup of castor sugar
Either 1.5 cups of chopped strawberries or 8 passionfruits
1/2 teaspoon of vanilla extract

Start by whipping the cream

Add the vanilla extract and combine

Whisk the egg whites until you reach stiff peaks

…this is soft peaks…

… and this is stiff peaks. When you lift the whisk and the egg white remains in the same form, you know you’ve reached stiff peaks.

Add the lemon juice and sugar gradually in stages until the sugar has dissolved and the mixture is glossy.

Add the passionfruit to the cream and then gently fold into the whisked egg white mixture.

I’m hosting a christmas dinner tomorrow night, so I decided to serve the Passionfruit Cloud in these little jars that I bought from Sweet Style


I also have the bamboo spoons from Sweet Style and the ‘enjoy’ and ‘yum’ stamps, so I tied on the spoons using some red and white twine (bought from ebay)

And lastly I attached a rudolph printable that I purchased from the TomKat Studio. I cut out the rudolph and then stuck it onto some red glittery paper, before using a 2″ scallop cutter to cut it out.

Refrigerate until you are ready to serve.

    I’m sure these were a big hit with your dinner guest. The look delicious and they are so cute in those little jars with their own spoons.
