In a medium saucepan, bring the milk to a boil. Add the salt, pepper, and butter; stir until melted. Stir in the flour until smooth. Reduce heat to low and add the cheese, stirring constantly until melted. Remove from heat and stir in the sour cream. Pour mixture over the cooked pasta and toss well. Transfer to a greased 13×9 baking dish. Top with the Parmesan cheese. Bake 20 minutes or until bubbly. Let stand 5 minutes before serving.

Roll each rectangle into a 12×6-inch rectangle. Cut each rectangle crosswise into 6 equal strips. Arrange the strips in a single layer on a cookie sheet. Bake at 375°F for 10 minutes or until golden. Cool completely. Combine the cheese, dressing, and sour cream in a bowl. Spread half of the mixture evenly over the cooled crusts. Sprinkle with the onions. Repeat layers. Serve immediately.
Potato stacks with Gouda rind:

Ingredients: 2 medium potatoes about 8 oz 4 slices bacon, cooked and crumbled 1/4 cup shredded sharp Cheddar cheese 1/4 cup shredded mozzarella cheese 1/4 cup grated Parmesan cheese 1/4 tsp garlic powder 1/8 tsp salt 1/8 tsp black pepper 1/8 tsp paprika 1/8 tsp dried oregano 1/8 tsp ground nutmeg 1/8 tsp ground red pepper 1/8 tsp white pepper 1/8 tsp freshly ground black pepper 1/8 cup mayonnaise Instructions: Preheat oven to 400 degrees F. Slice potatoes lengthwise about 1/4 inch thick. Place slices on baking sheets lined with parchment paper. Top each slice with 1 teaspoon of bacon, 1 tablespoon of cheese, and a sprinkle of spices. Bake for 20 minutes or until edges begin to turn golden. Remove from oven and let cool slightly. Invert each stack onto serving plate. Drizzle with mayonnaise. Makes 4 servings.
