2) Put 250 g plain flour in a bowl. Dissolve 50 g caster sugar in 125 ml hot tap water. Whisk the dissolved sugar and water into the yeast solution. Gradually whisk in 200 ml cold water until smooth.
3) Transfer the dough onto a lightly floured work surface. Knead gently for five minutes. Shape the dough into a ball and return it to the bowl. Cover the bowl with plastic wrap and leave the dough to rise for 45 minutes.
4) Punch down the risen dough and knead again for three minutes. Divide the dough into four equal portions. Roll each piece out thinly on a lightly floured board. Cut each roll into eight pieces. Arrange them on baking trays lined with nonstick paper or silicone mats. Leave the rolls to prove for 20 minutes. Meanwhile, preheat your oven to 180°C. Bake the rolls for 8 -10 minutes. Cool slightly and brush with melted butter. Sprinkle over icing sugar. Serve while still warm.
5) Once the first batch of rolls is baked, transfer the rest of the dough to the freezer. Freeze for at least six hours. Thaw the frozen dough and shape it into balls. Return the shaped rolls to the freezer. Repeat these steps every time you use up all the yeast. This will ensure that you always have plenty of fresh yeast available.
6) You may want to freeze the leftover dough so that you don’t run short of yeast during busy periods. Simply divide the dough into small chunks and place them in zip-lock bags.
Fresh yeast lasts longer than dry yeast because it doesn’t need any preservatives added to keep it alive. However, if you are planning to store it for more than a few weeks, you should buy powdered yeast instead. It’s much easier to measure and won’t go stale easily.
