Store in the fridge for up to two weeks. To serve, simply mix the dressing with greens and veggies.

Minestrone soup is a classic Italian dish. It is usually served with pasta but it is also great with bread. This recipe is from my grandmother’s recipe book. She used to make it for us kids whenever she had extra vegetables lying around. I hope you’ll try it! Ingredients 1/2 lb dried cannellini beans or 2 cups cooked 3 medium carrots, peeled and chopped 1 medium zucchini, cut into cubes 1 cup diced celery 1 medium yellow onion, finely chopped 4 cloves garlic, minced 2 bay leaves 1 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 1/4 teaspoon crushed red pepper flakes 1 28 oz can diced tomatoes 1 14 oz can reduced sodium vegetable broth 1/2 cup uncooked elbow macaroni Directions Rinse the beans thoroughly under cold running water. Place the beans in a large saucepan and add enough cold water to cover by about 2 inches. Bring to a boil over high heat. Reduce the heat to low and simmer until tender, about 45 minutes. Drain well and set aside. In a large stockpot, combine the beans, carrots, zucchini, celery, onion, garlic, bay leaves, salt, pepper, red pepper flakes, tomatoes, and vegetable broth. Bring to a boil. Reduce the heat to medium-low and simmer, uncovered, stirring occasionally, until the vegetables are very soft, about 30 minutes. Stir in the macaroni and continue to simmer, stirring occasionally, until heated through, about 10 minutes longer. Remove the bay leaves and season with additional salt and pepper to taste. Serve hot. Makes 6 servings.
Seasoned French fries
This is an easy recipe to make. Just follow these steps: Wash and dry potatoes. Cut potatoes into strips. Put potato slices in a bowl. Add some olive oil and salt. Mix well. Let stand for 15 minutes. Heat oven to 450 degrees F. Line baking sheet with parchment paper. Spread potato mixture evenly onto prepared pan. Bake for 20 minutes. Turn chips and bake another 10 minutes. Cool completely. Store in airtight container. Makes 8 servings.
Baked potatoes
To make baked potatoes, wash and scrub potatoes. Then cut lengthwise in half. Place each piece in a buttered baking dish. Cover with foil. Bake at 375°F until tender, about 1 hour. Remove from oven. Uncover. Sprinkle with butter and sprinkle with cheese. Return to oven and bake 5 minutes longer. Serve immediately. Serves 4.
Broccoli florets
Boil broccoli florets in salted water for 3 minutes. Drain well. Toss with olive oil and salt. Spread on a cookie sheet. Roast in a 350 degree F oven for 20 minutes. Stir occasionally. Serves 2. Cabbage Cut cabbage into wedges. Put in a bowl with vinegar, sugar, and salt. Let stand 15 minutes. Mix together flour, pepper, and paprika. Dip cabbage in mixture; place on a greased cookie sheet. Bake in a 400 degree F oven for 30 minutes. Serves 6.
