Combine all ingredients in a mixing bowl; stir well. Spoon mixture into pork chops. Place chops in a greased 13 x 9 baking dish. Cover with aluminum foil. Bake at 350°F for 45 minutes. Remove foil; bake an additional 15 minutes. Makes 6 servings.

Place potatoes in a medium bowl and toss with olive oil, salt, and pepper. Spread potatoes onto baking sheet and bake for 30 minutes, turning halfway through. Remove from oven and smash each potato quarter using a fork. Return to oven and continue to roast until golden brown and crispy, about 15 to 20 minutes longer.
